Ingredients:
**For the veggie layers:**
* 2 medium sweet potatoes, peeled and thinly sliced
* 1 zucchini, sliced thin
* 1 red bell pepper, sliced
* 1 cup spinach or kale, chopped
* 1 small onion, finely chopped
* 2 cloves garlic, minced
* 1 tablespoon olive oil
* Salt and pepper to taste
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
**For the cheese sauce (optional, vegan version can use cashew cream):**
* 2 tablespoons butter (or vegan butter)
* 2 tablespoons all-purpose flour
* 2 cups milk (or plant-based milk)
* 1/4 teaspoon nutmeg
* Salt and pepper to taste
* 1 cup grated mozzarella (or vegan cheese)
* 1/4 cup grated Parmesan (optional)
**For assembly:**
* 8–10 lasagna noodles (pre-cooked or no-boil)
* Olive oil or cooking spray to grease the pan
