Preheat the oven
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
Prepare the potatoes
Wash and cut the baby potatoes in half. Pat them dry with a paper towel.
Make the garlic butter mixture
In a large bowl, mix the melted butter, olive oil, and minced garlic.
Season the potatoes
Add the potatoes to the bowl. Sprinkle in salt, pepper, and Italian seasoning. Toss well until all potatoes are coated.
Add Parmesan
Add the grated Parmesan cheese and mix again so it sticks to the potatoes.
Arrange for roasting
Place the potatoes cut-side down on the baking tray in a single layer.
Roast
Bake for 30–35 minutes, or until the potatoes are golden brown and crispy on the outside and tender inside.
Garnish & serve
Remove from the oven, sprinkle with fresh parsley, and serve hot.
Tip: For extra crispiness, broil for the last 2–3 minutes!
