Creamy Seafood Stuffed Potato
Rich, creamy, and loaded with juicy shrimp and tender crab—this stuffed potato is pure indulgence. It’s the kind of comforting, restaurant-style dish you can easily make at home!
🛒 Ingredients (Serves 2–3)
For the potatoes:
2 large russet potatoes
2 tbsp olive oil
Salt, to taste
For the seafood filling:
1/2 lb shrimp, peeled & deveined
1/2 cup lump crab meat
2 tbsp butter
2 cloves garlic, minced
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan
1/2 tsp paprika
1/2 tsp red pepper flakes (optional)
Salt & black pepper, to taste
For garnish:
Fresh parsley, chopped
Instructions
Preheat oven to 400°F. Rub potatoes with olive oil and salt, then bake for 50–60 minutes until tender.
In a skillet, melt butter over medium heat. Add garlic and sauté until fragrant.
Add shrimp and cook for 2–3 minutes until pink. Gently fold in crab meat.
Pour in heavy cream, then stir in mozzarella, Parmesan, paprika, and seasoning. Simmer until thick and creamy.
Slice open baked potatoes and fluff the inside with a fork.
Spoon the creamy seafood mixture generously into each potato.
Return to oven for 5–8 minutes until bubbly and slightly golden.
Garnish with parsley and a pinch of red pepper flakes. Serve hot.
